- ¼ cup pumpkin seeds (toasted), soaked for 1 hour
- ¼ cup flat parsley
- 1 clove garlic garlic
- 1 tsp ground cumin
- 1 tsp maple syrup
- 1 tsp lime zest
- 1 tbsp tahini
- 2 tbsp fresh lime juice
- sea salt & black pepper to taste
- ½ cup water
- 1 scoop PROFI Booster Protein
BOWL:
- ½ cup white beans
- 1 cup rice, cooked
- ½ red onion, sliced
- 1 cup brussel sprouts, roasted
- 2 cups kale, chopped and steamed
- Parsley and toasted pumpkin seeds to garnish
STEPS:
- Roast Brussels, make your rice, prep your veg
- Blend tahini, toasted pumpkin seeds, parsley, garlic, cumin, maple syrup, lime juice, sea salt & water until smooth
- Assemble bowl, garnish and serve
