VANILLA PROTEIN POWDER | NATIONAL COOKIE DAY | HOLIDAY TREATS

INGREDIENTS:

  • 1 ¾ cups of All-Purpose Flour
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • 1 ½ tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 tsp Ginger
  • ¼ cup Vegan Butter, room temp
  • 1 scoop PROFI Vanilla Protein
  • ¼ cup Coconut Oil
  • ½ cup Sugar
  • 2 tbsp Brown Sugar
  • Flax Egg
  • ¼ tsp Almond Extract
  • 2 tbsp Slivered Almonds

STEPS:

  • Whisk together dry ingredients in a bowl
  • Beat together coconut oil, butter, almond extract, and sugars until creamed
  • Add in the flax egg to the wet ingredients and beat until combined
  • Slowly mix in the dry ingredients ⅓ at a time until a dry dough forms
  • Roll the dough into a ball and let chill covered in the fridge for 2 hours
  • Preheat your oven to 350F
  • Line two baking trays with parchment paper
  • Dust a work surface with flour and roll the chilled dough out to ⅛ inch thickness
  • Cut out the dough into whatever shape you desire
  • Top each cookie with a few almonds 
  • Place trays in the fridge for 10 mins to re-chill before baking
  • Bake for 10-12 minutes or until they are lightly browned around the edges
  • Allow cooling fully before serving
