INGREDIENTS:
- 1 ¾ cups of All-Purpose Flour
- ½ tsp Baking Soda
- ¼ tsp Salt
- 1 ½ tsp Cinnamon
- 1/2 tsp Nutmeg
- 1 tsp Ginger
- ¼ cup Vegan Butter, room temp
- 1 scoop PROFI Vanilla Protein
- ¼ cup Coconut Oil
- ½ cup Sugar
- 2 tbsp Brown Sugar
- Flax Egg
- ¼ tsp Almond Extract
- 2 tbsp Slivered Almonds
STEPS:
- Whisk together dry ingredients in a bowl
- Beat together coconut oil, butter, almond extract, and sugars until creamed
- Add in the flax egg to the wet ingredients and beat until combined
- Slowly mix in the dry ingredients ⅓ at a time until a dry dough forms
- Roll the dough into a ball and let chill covered in the fridge for 2 hours
- Preheat your oven to 350F
- Line two baking trays with parchment paper
- Dust a work surface with flour and roll the chilled dough out to ⅛ inch thickness
- Cut out the dough into whatever shape you desire
- Top each cookie with a few almonds
- Place trays in the fridge for 10 mins to re-chill before baking
- Bake for 10-12 minutes or until they are lightly browned around the edges
- Allow cooling fully before serving
