BOOSTER PROTEIN POWDER | QUICK, EASY, & DELICIOUS

Makes 3-4 Servings

INGREDIENTS:

Tahini Dressing:
– Juice of one Lemon
– 1 Scoop PROFI Protein Booster
– 1 tsp Garlic Powder
– ¼ c Tahini
– Juices from Roasted Mushrooms
– Water to create the consistency you prefer

Mushrooms:
– 500g Whole Mushrooms
– 2 tbsp Olive Oil
– 4 Garlic Cloves
– ½ tsp Salt
– 1 ½ tbsp Lemon juice
– Lemon Zest
– Fresh Thyme

Quinoa:
– 1 cup Multicoloured Quinoa
– 2tbsp Fresh Thyme
– 2 tbsp Fresh Chives
– ¼ tsp Salt
– 1 tbsp Lemon Juice
– Black Pepper to taste

STEPS:

– Toss mushrooms in an oven-safe pot with olive oil, lemon zest, garlic, salt, place two full
thyme branches in pan
– Preheat oven to 450F
– Bake the mushrooms for 25mins
– Strain juice from pan and use for dressing
– Whisk together dressing ingredients, you may have to add water 1 tbsp at a time to get
the consistency you desire depending on the tahini you use
– Make quinoa as per boxes directions
– Stir in herbs, and lemon, and salt to the quinoa
– Serve mushrooms over quinoa with tahini dressing
