Makes 10 Servings | Total Prep, 25 Minutes

Ingredients:

Rustic Mashed Potatoes

  • 5 Large Potatoes, skin on
  • 1 cup Unsweetened Almond Milk, room temp
  • 2 tbsp Vegan Butter, room temp
  • 2 tsp Garlic Powder
  • 1 scoop PROFI Protein Booster
  • salt & pepper to taste
  • chives for serving

Vegan Mushroom Gravy

  • 5 cups Cremini Mushrooms, chopped
  • 1 Yellow Onion, diced
  • 5 cloves of Garlic, minced
  • 1/4 cup All Purpose Flour
  • 2 cup Vegetable broth
  • 1/2 cup Red Wine
  • 1/4 tsp dried Sage (or a few leaves of fresh)
  • 1/4 tsp dried Thyme
  • 1/8 tsp All Spice
  • 1 tbsp Balsamic Vinegar
  • 1 tbsp Soy Sauce
  • salt & pepper to taste
Directions:
  • Scrub the potatoes clean and chop into uniform sized pieces, about an inch big.
  • Bring a pot of water to a boil and boil the potatoes covered for ten minutes or until they can be pierced by a fork.
  • Strain potatoes from the pot and in a large boil mash with a potato masher or potato ricer (a food processor is not recommended as it will produce gummy potatoes).
  • As you mash add in the vegan butter first until it is fully incorporated, then add the almond milk 1/4 cup at a time.
  • Add in the protein booster and the final bit of almond milk, combine well.
  • Add spices to your taste and enjoy!
  • Heat 1 tbsp of olive oil over medium heat and sweat out the yellow onions as you prepare the rest of your ingredients
  • Once the onions are beginning to brown add in the chopped mushrooms and the minced garlic. Sautee until the mushrooms have sweat out and are beginning to brown as well.
  • At this point, in a separate bowl, whisk together half of the veg stock with the flour 1 tbsp at a time until it is lump free.
  • Add the remaining veg stock to the pan with your mushrooms along with the balsamic vinegar, red wine, and soy sauce. Reduce the heat to low.
  • Add to the pan the veg stock that you mixed with the flour, stir constantly as it begins to thicken.
  • Once the gravy has thickened add in the herbs and spices to your taste preference.
  • Continue to simmer on low, stirring constantly as the gravy thickens. Once it is thick enough to coat the wooden or metal spoon you are stirring with remove it from the heat and allow to cool. The gravy will continue to thicken as it cools.
  • Reheat before serving and enjoy!
